- 1 (7 ounce) package spaghetti
- 1 lb ground beef
- 1 small onion, chopped
- 1 (16 ounce) can kidney beans, rinsed, and drained
- 1 (14 1/2 ounce) can diced tomatoes, undrained
- 1 (4 ounce) can mushroom stems and pieces, drained
- 1⁄3 cup water
- 1 (8 ounce) envelope chili seasoning mix
- 2 tablespoons grated parmesan cheese
- 1⁄4 cup shredded part-skim mozzarella cheese
directions
- Cook spaghetti according to package directions.
- In a large skillet, cook beef, and onion over medium heat until meat is no longer pink.
- Drain spaghetti, and add to meat mixture.
- Stir in the beans, tomatoes, mushrooms, water, chili seasoning, and parmesan cheese.
- Cover and simmer for 10 minutes.
- Sprinkle with mozzerella cheese.

What a nice change to traditional spaghetti -- loved the addition of the chili seasoning and the beans. I added an extra can of petite diced tomatoes (just our preference) and added additional parmesan vs. the mozzarella cheese. If you want this dish to be more spicy, you can always add a Texas favorite : ) -- rotel tomatoes and green chilies. Made for the For Your Consideration tag game.
