Chicken With Squash, and Onions

"I recently started a diet, and my fat grams per meal are important. This is a quick, tasty recipe using just a few ingredients. It is really good to be so low in fat! Squash is not a favorite of some of my family, but they all enjoyed this dish."

  • 1 12 lbs chicken breasts, boneless & skinless
  • 1 small yellow squash (crookneck)
  • 1 small vidalia onion
  • Mrs. Dash seasoning mix, sprinkled generously
  • pepper
  • water, 1/2-inch deep in skillet (hot water from tap)

  • Preheat skillet. Cut raw chicken into app. 2" sq. pieces. Spray skillet with non-stick cooking spray. Place chicken in pan. Add water until it is approximately 1/2" deep. Sprinkle generously with Mrs. Dash. While this begins to cook, slice squash into thin circles. Place circles on top of chicken. Sprinkle squash with pepper to taste. Slice onion into circles, then cut circles in half. Separate pieces, and add to pan. Put lid on skillet and cook until juices from chicken run clear.
