For the Chicken
- 1⁄2 cup flour
- 1⁄2 cup cornstarch
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 eggs
- 1⁄2 cup milk
- 2 -3 lbs chicken, cut into bite size pieces (I use boneless skinless breasts)

For the sauce
- 1⁄2 cup crushed pineapple in juice
- 1⁄4 cup sugar
- 1⁄4 cup water
- 1⁄4 cup vinegar
- 3⁄4 teaspoon soy sauce
- 1⁄4 cup plum preserves or 1/4 cup plum jam

To thicken
- 1 1⁄2 teaspoons cornstarch
- 1 1⁄2 teaspoons water
directions
- Mix the first 4 ingredients well. Add eggs and milk. Whisk together well to make batter. Dip chicken pieces in batter and deep fry. Drain on a pan lined with paper towels.
- In a sauce pan, mix pineapple, sugar, water, vinegar and soy sauce. Bring to a boil. Mix corn starch and water together. Add to the sauce pan. Bring to a boil again. When thick, let cool for 15 minutes Add plum preserves and mix well.
- Serve sauce over chicken or as dipping sauce.
