Chicken With Peanut Sauce

ingredients
- 2 boneless skinless chicken breasts
- 1⁄4 teaspoon fresh ground pepper
- salt
- 2 teaspoons butter
- 1⁄2 small red bell pepper, chopped
- 2 -3 cups shredded napa cabbage
- 1⁄4 cup peanut butter
- 1⁄2 cup water
- 1 tablespoon lime juice
- 1⁄4 teaspoon ground coriander
- 1⁄4 teaspoon ground cumin
- 1 green onion, sliced
- 1 clove garlic, chopped
directions
- Sprinkle both sides of chicken with pepper,salt lightly.
- Melt the butter in a 10-inch skillet over medium heat.
- Cook chicken in the butter for 15 to 20 minutes, turning once, until juice is no longer pink when centers of thickest pieces are cut.
- Remove chicken from skillet and keep warm.
- In same skillet, add the peanut butter and last 6 ingredients.
- Heat over mdium heat, stirring frequently, until hot and slightly thickened.
- Divide the shredded cabbage on 2 serving plates, top with chicken and sauce.
- Garnish each serving with diced red pepper.

My husband and I both thought this was ok. I did not have any cabbage, so I served it over a bed of rice. Also, I cut my chicken into thin peices. I have to say it was a bit too much peanut-buttery for me, but my husband did not have a problem with the peanut butter taste. I did add some cayenne pepper & some soy sauce to the peanut butter sauce to give it a little more taste.Thanks for posting.

Paula, this is wonderful! I doubled the recipe, cut out the butter and used cooking spray, and took some cues from other reviewers, such as I used 1/2 teaspoon of cayenne pepper and heaped the amount of cumin and coriander. I used broth instead of water, and I had everything right at my fingertips, then everything went to you-know-where at our house with "people stopping by out of the blue." I don't like to take someone else's recipe in hand the first time I make it, but I was browning the chicken when company came, so I just tossed the whole lot of it into the pan, except for the cabbage, and let it simmer. Then I tossed the shredded cabbage into the nearly done rice. And voila! This was a meal to remember and I'll make it again! Superb.

I have had my eye on this recipe for quite some time, and finallly got to make it today, this chicken dish is so good! the peanut butter with the combo of spices is perfect. I seasoned the chicken with cayenne pepper and seasoning salt, and used chicken broth in place of water, I also doubled the complete recipe, and served it with basmati rice. DH and myself loved this recipe, I will be making this again! thanks Paula!

This is a great 2-serving meal. I did make a few changes: I sauteed the chicken in oil rather than butter. I used chicken bouillon in place of the water, I doubled the garlic, and I served it on a bed cabbage mixed with cooked rice after stir-frying the rice-cabbage mixture. After eating one chicken breast, I mixed a tiny bit of sambal oelek into the sauce before having the second for lunch the next day, I liked it both with and without--actually maybe a bit more without the sambal oelek. Anyway thanks for a great meal for two--will definitely make again.

This was good. I didn't have any cabbage, so I didn't serve it on a bed of it, but it still tasted great. I followed the peanut sauce recipe to a T, but I mixed everything together in a pyrex bowl while the chicken cooked, then simmered it, stirring often to heat it up. I used dried cilantro, but I think fresh would do the sauce better justice. I also think next time I will use chicken stock instead of water because the peanut sauce was a bit bland and I had to add more Peanut butter. I think this sauce would be great for dipping as well. Next time, I think I will add a few sprinkles of chili pepper flakes to give it a bit of zip. I also put the chicken back in the pan with the heated peanut sauce to coat it and let the flavors go on the chicken. I will definitely make this again, but will experiment a bit with the PB sauce as something was missing, but I can't put my finger on it. Thanks Paula, this is a keeper!

I came to this site in March of 2004. It was then called Recipezaar. This site was the first on-line site that I ever joined. I first popped in 2003 while searching for a Peach Cobbler Recipe. In March of 2004, DH was having shoulder surgery and I was looking for a Split Pea Soup. Once again I found myself on Zaar as it came to be called.
Over the years I hung out and learned from some of the best home cooks in the country, I posted over 700 recipes on the site, reviewed over 3500 recipes and posted over 3000 food photos. Over the next 10 years the site made many changes and in 2010 it was sold to to Food Network and became Food.com.
Until last year we played games, talked and shared with one another. As a result of the community and the relationships I built I got to meet some wonderful people from all over the country. I also have a great number of friends that I have never meet face to face. Some of us still hang out at various places across the net.
Zaar was more than a cooking community. It was an internet community of friendship. Life is an adventure ever changing.
