Chicken With Mushroom Sauce

- 3 tablespoons butter, divided
- 4 boneless skinless chicken breast halves
- 2 cups fresh sliced mushrooms
- 1 1⁄2 tablespoons cornstarch
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon pepper
- 1 cup milk
- 2 teaspoons lemon juice
- 1⁄2 teaspoon Worcestershire sauce
- 1⁄2 cup sour cream
directions
- In lg skillet, heat 2 T butter on med-high.
- Brown chicken on both sides; cook until juices run clear.
- Remove and keep warm.
- Add remaining butter to skillet.
- Add mushrooms; cook and stir for 3 minutes.
- Stir in cornstarch, salt and pepper.
- Slowly add milk, stirring constantly; bring to a boil.
- Reduce heat; add lemon juice and Worcestershire sauce; cook and stir for 1 minute.
- Add sour cream; heat through.
- Serve over chicken.

Very good chicken and quick too! The mushroom sauce was just excellant, i used half olive oil and half butter, also used 2% milk and no fat yogurt instead of sour cream. We really enjoyed the hint of lemon, very refreshing. Served it with baked potato and brocolli, the sauce was particularly good over the potato. Thanks for sharing Inez, we will be serving this again.

What a success this was! My entire family gobbled it down; it's definitely a recipe I'll make again. It was easy, didn't take too long to pull together, and has a delicate creamy sauce with just a touch of lemon flavour. The only changes I made were to use less mushrooms (I used cremini), only because I didn't buy enough, and I used half butter and half olive oil. I also added 2 minced garlic cloves along with the mushrooms. Thanks for posting!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
