- 1 teaspoon olive oil
- 3⁄4 lb boneless skinless chicken breast, cut into strips
- 2 cups mushrooms, sliced
- 1⁄2 cup onion, chopped
- 2 garlic cloves, minced
- 10 ounces cream of chicken soup
- 2⁄3 cup water
- 3⁄4 cup orzo pasta
- 1 cup carrot, shredded
- 1⁄4 teaspoon ground black pepper
- 1 tablespoon fresh basil, chopped
- 1 tomatoes, diced
directions
- Cook the chicken until well browned in the heated oil at medium-high heat in a large skillet.
- Add the mushrooms, onion and garlic.
- Cook and stir for 3 minutes.
- Add all of the other ingredients except for the tomato.
- Mix well and bring to a boil.
- Reduce the heat.
- Cover and simmer for 15 minutes, stirring occasionally.
- Add the tomato and if desired, more fresh basil, and stir to combine.

Wow, Wow, Wow! Creamy, luscious goodness. We loved this. My DH says 6 stars. It was so simple and quick to prepare. I had just bought a basil plant so it was my first recipe made with it. Made just as written except I used a 4 oz. can of mushrooms and no tomato. I think next time I'll cut chicken into bite size chunks. Can't wait to make it again! Thanks for posting.
