DIRECTIONS

  • Cook rice, chill.
  • Heat 1/2 of oil, add eggs and scramble slightly. Remove from heat.
  • Add rest of oil, fry onions and chicken. Add rice, stir to coat.
  • Stir in eggs and remaining ingredients. Heat through.
