Chicken Cashew and Noodle Stir-Fry

- 440 g egg noodles (packet Wokka thin egg style shelf fresh noodles specified)
- 2 tablespoons honey
- 1 tablespoon reduced sodium soy sauce
- 1 tablespoon lemon juice (freshly squeezed)
- 1 teaspoon olive oil
- 500 g chicken breast fillets (lean trimmed of fat ad cut into thin strips)
- 1 red onion (cut into thin slivers)
- 250 g snow peas (halved diagonally)
- 1 red capsicum (large cut into strips, bell pepper)
- 1 green capsicum (large cut into strips, bell pepper)
- 2 carrots (large cut into short thin sticks, julienned)
- 2 garlic cloves (minced)
- 2 tablespoons water
- 1⁄3 cup roasted cashews (unsalted to serve, personally I'd use more)
directions
- Put the noodles in a medium heatproof bowl and cover with boiling water and set aside for 2 minutes and the drain and separate the noodles and set aside.
- Put the honey, soy sauce and lemon juice in a small bowl and whisk to combine and set aside.
- Brush a little oil over a large wok and heat on high until the wok is hot and then add half the chicken and stir fry for 2 minutes or until the chicken is almost cooked and transfer to a plate.
- Brush the wok with a little more boil and reheat the work on high and repeat with remaining chicken and then remove chicken from the wok.
- Brush the wok with the remaining oil and heat on medium high and add the vegetables and garlic and stir-fry for 2 minutes and then add the water and cook covered tossing twice for 2 minutes until the vegetable are just tender.
- Add the noodles and chicken to the wok and toss well to combine and the sauce mixture and toss to combine and heat through and then top with the cashews to serve (personally in this case I would just add the cashews once plated up).

Very nice, Pat!! Made almost exactly to recipe, except that I made it sooner than I expected to, and didn't have any peppers. I did have zucchini, so subbed that very successfully, and I would have added baby corn if I'd had it ... but I didn't! The trick with stir-fry is always, do the prep, then the cooking takes no time at all, and you have a delicious healthy meal! Thank you, this was lovely! Made for Make My Recipe tag game.

Pretty much followed the recipe, although I did cut it in half for just the 2 of us, & then also used the 1/3 cup of cashews called for in the full recipe! Love those nuts! This stir-fry was absolutely delicious & so easy to prepare! A great keeper recipe! Thanks for sharing it! [Made & reviewed in Went to the Market recipe tag]

Lovely easy recipe Pat.<br/>The only thing I would change is too add more sauce and maybe thicken it a little, but other than that it was lovely.<br/>The family also enjoyed this, and the only change I made was to add brocolli and bok choy, as I have so much I am growing and need to use up. Ohhhh and I also followed your suggestion of more cashews........... which is a must!<br/>Enjoyed by all.....Thanks for another lovely quick,easy <br/>and wonderful tasting recipe Pat.

With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
