  • In a pan, fry the dry uncooked rice and half of the small onion in a little olive oil until the onion is beginning to soften.
  • Add the chicken stock.
  • Bring the rice, to the boil, so that it boils hard and produces steam. Turn the heat down and let it simmer so the rice absorbs the liquid.
  • Heat some oil in another pan. Add the chopped peppers and the rest of the onion and cook on a medium heat for two minutes.
  • Add the chicken and sausage, stirring continuously until thoroughly cooked.
  • Add the white wine and cook for another three minutes.
  • When the rice is cooked, stir it into the other pan along with the flat leaf parsley and lemon juice.
  • Serve immediately.
