Chicken and Rice

"I got this recipe from a friend years ago. It's really 'comfort food' I think. You can use the whole cut-up chicken, or whatever pieces you prefer... normally I just use breasts, but today I'm using a family pak of thighs that were on sale."

ingredients

  • 12 cup margarine
  • 1 cup uncooked rice
  • 1 13 cups water
  • 1 dash garlic salt
  • 1 (10 1/2 ounce) can cream of mushroom soup
  • 1 (10 1/2 ounce) can cream of celery soup
  • 1 (10 1/2 ounce) can cream of chicken soup
  • 1 (2 1/2 ounce) envelope dry onion soup mix
  • 3 -4 lbs chicken pieces

directions

  • Melt margarine.
  • Combine with remaining ingredients EXCEPT chicken.
  • Place mixture in a large casserole and put chicken pieces on top.
  • Cover with lid or foil and bake at 350 degrees F. for about 2 hours.

  1. My DH raved about this! I used bone-in chicken thighs and made a couple of alterations: added fresh thyme and sprinkled the chicken with Alton Brown's fried chicken seasoning and subbed butter for margarine (don't use the stuff.) Would've given 5 stars, but the butter was way overwhelming, the top of the dish was drowning in butter. Next time I'll cut it back to maybe 2 T. Otherwise an excellent dish, will definitely make this a regular!
