Chicken and Cilantro Bites

A tasty little appetizer, easy to make, easy to eat. Great for BBQs or pool-side.

ingredients
- 1⁄4 cup soy sauce
- 1⁄4 cup rice vinegar
- 1 lb ground chicken
- 1 large egg
- 1⁄2 cup cilantro, finely chopped
- 2 scallions, finely chopped
- 2 teaspoons asian sesame oil
- 1 teaspoon salt
- 3⁄4 cup cornstarch
- 1⁄2 cup oil
directions
- Stir soy and vinegar together for a dippins sauce; set aside.
- In mixing bowl, add ground chicken, egg, chopped cilantro, scallions, sesame oil and salt.
- Spread cornstarch in a shallow baking dish 13 x 9 inch.
- With wet hands, form chicken mixture into 1 inch balls.
- Roll in cornstarch.
- Heat oil in a heavy skillet.
- Cook the chicken balls in hot oil 2-3 minutes until browned.
- Serve with dipping sauce.

I made these for Pick A Chef Spring 2009. We really enjoyed the combination of Asian flavors in these bites and dipping them in the sauce is a must. Unfortunately I couldn't add the cornstarch coating because of my husband's diabetes. Perhaps that would have made a difference in keeping them more juicy. Also, I used ground chicken breast which is dryer than whole ground chicken. I think next time, I'll cover with a lid a few minutes at the end to return the juiciness to them.
