Chicken and Broccoli Couscous With Salsa

Couscous is one of the staple foods of the Maghreb (western North Africa). I am always experimenting & combining it with different flavors. I watched a friend whip this up for our lunch one day & it became my new favorite.

Salsa
- 1 cup diced fresh tomato
- 1 tablespoon chopped fresh basil
- 1 tablespoon balsamic vinegar or 1 tablespoon red wine vinegar
- 1 tablespoon olive oil
- 1⁄2 teaspoon sugar
- 1 garlic clove, minced

Chicken
- 1 tablespoon olive oil
- 12 ounces boneless skinless chicken breasts, cubed
- 2 cups broccoli florets

Couscous
- 2 cups water
- 1 tablespoon olive oil
- 1 (10 ounce) package couscous, Near East Brand Roasted Garlic & Olive Oil flavor
directions
- In small bowl, stir salsa ingredients together. Season to taste with salt & pepper, set aside.
- Bring water to a boil and stir in oil, couscous & seasoning packet from box.
- Cover, remove from heat & let stand while you prepare the chicken.
- In large skillet, heat oil over medium high heat.
- Add chicken & cook 3-5 minutes or until no longer pink, stirring frequently.
- Add the broccoli & cook while stirring 3 minutes or until broccoli is crisp tender.
- Fluff couscous with fork & stir into chicken & broccoli.
- To serve, portion couscous on plates & top with salsa.

This was simple to make and good! I prepared it exactly as directed by the recipe. I found that the salsa is where most of the flavor comes from. The salsa flavor compliments the broccoli and couscous nicely. You can add as much salsa as you like. The recipe sounded to me like it took a bit of preparation, but I was pleasantly surprised as to how easily it came together! Will be having left overs for lunch today!
