Chicken and Bacon Korma Burger

"I am trying to clean out my fridge and freezer in anticipation of going back to being super strict with my diet after the holidays. I had a pack of chicken thighs and drumsticks frozen that needed to be used and looked for what I could do with them with the stuff I had in my fridge. This is what was born and we liked them. This made four big burgers. I had mine just with some crisp lettuce and fat free mayo."

Ready In:

• 1 lb dark chicken meat, skinned and cut into chunks (I used a mix of thighs and legs)
• 4 slices bacon, cut into chunks
• 12 large onion, cut into rough chunks
• 3 tablespoons korma paste
• 13 cup dried breadcrumbs

• Put onions into food processor and blitz until very finely chopped.
• Put into a large bowl.
• Put the chopped up chicken and bacon into the food processor and pulse until they are minces and combined. You want it pretty fine but stop before they become a total paste.
• Put meat mixture into the bowl with the onions.
• Add the korma paste and breadcrumbs.
• Work the mixture together with your hands until it is fully combined and the paste is evenly distributed.
• Form into four patties.
• Fry patties in a skillet with a little canola oil for about 5 minutes each side or until cooked through. You could also do this on a Foreman type grill and save yourself those calories.
• Serve.

I am originally from the Philadelphia area of the United States but have been living in London, UK since 1996. I now have dual American and British citizenship. I became a widow at the age of 27 in 2004 but have managed to fall in love again and was married again on July 19, 2008. I have a double major honors degree in sociology and politics and am slowly working my way through a Masters. I am a wanabee writer but until that dream becomes a reality I work in internet marketing where I build websites for profit. So, it is nice to come to a site like this and just enjoy being on the internet rather than using it as a work environment. I am a BBW (big woman) but over the past two years I have lost over 80lbs and am working my way down the scales slowly but steadily. These days, I am trying to eat a lot less meat. So, I am trying to have as many vegetarian recipes in the week as I can manage. I have started a blog - Weekend Carnivore where I blog about trying to eat a mostly vegetarian diet. I share a lot of my discovered recipes there. If I make one of your vegetarian recipes and I managed to take a good photo of it, chances are I will blog about it and tell everybody how much I enjoyed it.
