The recipe is a bit incomplete in that really you need to melt the butter in the microwave until only just liquid (not hot), then whisk in the vanilla and egg (hence why the butter must not be hot, otherwise you'll scramble the egg!), then incorporate all the liquids into a well in the centre of the dry ingredients and mix.

I've made this a couple times now. So quick, easy and delicious! So good I had to take it to my mothers to stop me from eating all of it. Loved by the whole family

Very quick and easy to make. Turns out I didn't have weetbix so subbed cornflakes which I crushed up a little. Only got to taste a sliver as I was giving away. Still seemed quite soft this morning after being in the fridge overnight, not sure if that is how it is meant to be or because of the cornflake substitution. Will try again with weetbix and re-review. Thanks for sharing.

This is a great square! I had to leave the coconut out as DS won't eat it. I might add some mini chocolate chips to it next time I make it. It was very easy to make. I did not have self raising flour, so added 1 1/2 tsp of baking powder to the recipe, I also used salted butter. I baked it at 325F for 20 minutes, let it cool for about 10 minutes & spread the icing on it. Thanks for posting this recipe mummy. Made for PAC spring 2011.
