  • Sift the flour with the salt.
  • Put all ingredients into a mixing bowl, beat hard for 1 minute (I use my hand held electric beater).
  • Put mixture into 18 greased & floured patty pans.
  • Bake for 15minutes at 180c.

  1. Masha'Allah, a really easy, quick and YUMMY recipe! I don't have measuring scales so I didn't use the exact quantities, but it still turned out fine! The only thing I would change is to add the cherry chunks at the end, after using the electric mixer, as my mixer crushed most of the cherry pieces so that there were practically no fat juicey chunks left, only tiny 'crumbs' of cherries, so in future I'll add them after using the mixer and stir them in manually. Also for those who are cooking cup cakes for the first time, only add a tiny bit of mixture to each cake case as it expands a lot. Next time I think I'll be making twice the quantity as these are going to disappear in no time!
     
  2. as per the last review,I added the cherries at the end,added a little milk and some baking powder.made 18 good size cakes. added icing and a cherry to the top.
