Good and easy. My store didn't have the potatoes with onion so I rehydrated some dried minced onion and added that with the potatoes. Used red and green bell peppers.

Damn I didn't think it would turn out as good as it did. I found this recipe through supercook, as they would find a recipe with the ingredients I had available and i was out of ideas. As a broke college student, I can see myself eating this weekly. Inexpensive ingredients, straightforward instructions and a whole lotta taste! - the only reason why i didn't give it 5 stars is because i thought it needed a pinch of salt, so I added quest fresco from the mexican store on top.
