Cheesy Breakfast Sausage and Egg Casserole

"This is a delicious brunch recipe it's great when you have a few people coming, I usually fry up the veggies, sausage and bacon a day ahead, then all I do is mix everything together ;-) all ingredients may be adjusted to taste."

  • Set oven to 375 degrees.
  • Butter a 13 x 9-inch casserole dish.
  • Saute mushrooms, green pepper green onions and jalapeno (if using) in butter until tender.
  • In a bowl, combine/whisk eggs, flour, baking powder; add mushroom mixture, then season with seasoned salt and black pepper.
  • Stir in remaining ingredients; mix well.
  • Pour into prepared baking dish.
  • Sprinkle with grated Parmesan cheese if desired.
  • Bake uncovered for 15 minutes.
  • Reduce heat to 325 degrees bake 35 mins longer or until a knife inserted in the middle comes out clean.

  1. This was an awesom recipe for us, it had all of our favorite ingredients. I had everything on hand so I didn't have to change alot of the recipe, however, for preference I cut the flour & butter back abit & increased the peppers. Lovely recipe, thanks for sharing.

  4. We had this for the day after X-MAS with family staying over. I made it the night before w/o the bacon, and with a red pepper instead of green and it turned out great. I also made a seperate serving w/o meat for my niece in a pop out tart pan and the smaller serving cooked well and was pretty to serve.
     
  5. This was very good. I left out the jalapeno because we had kids coming, but I think next time I will add it and let the kids eat something else if they don't like it! Do use good quality bacon and eggs--they make a difference! I used reduced fat cheddar cheese because that's what I bought by mistake, and it was fine. Overall, this is a good tasting recipe where you can do much of the preperation ahead of time. (Always appreciate those!)

  1. Awesome! We had guests stay with us for the weekend and I made this for brunch on Saturday. The smell of this baking makes your mouth water. The only thing I did different was to use pepper jack cheese in place of regular jack, because I didn't have a jalapeno pepper, it worked great. I also did not use the olives but never the less, this recipe was perfectly delicious and my guests loved it! Thanks Kittencal for another great recipe!
