A hearty delicious soup.

Ready In:



  • In soup pot, cook and break up ground beef.
  • Add onion,basil and beef broth.
  • Bring to a boil.
  • Add potatoes and green pepper.
  • Cover and simmer 12 minutes.
  • Bring back to a boil.
  • In saucepan, melt butter and stir in flour.
  • Cook 2 minutes.
  • Add to soup, stirring.
  • Reduce heat to low again and add cheese, cream and pepper.
  • Stir until cheese melts.
  • Serve.

    Very good soup! Is there a typo on the roux ingredients? It says 4 teaspoons of butter and flour, but I really think it should be 4 Tablespoons of butter and flour. My first try came out very thin when I did 4 teaspoons. But that may be because I used 2 cups of lactose free whole milk in stead of the light cream (because of personal issues with cream). I also doubled the amount of cheese called for so, the flavor of the cheese would come through. Will definitely make again.

    Love this recipe! Will be a keeper for fall/winter months! Family loved it. I did add the can of diced tomatoes with juice, also celery, But otherwise kept it the same. Delish!

    This is true comfort food....we had a cool day & company coming....braving all I made your recipe for the first time & was glad I's a fantastic soup, easy to make & the blend of flavors is perfect....can I give it 5*'s for each of the 4 of us that enjoyed it? We will have this often thru the winter...Thanks for a Great Recipe...<br/><br/>Updating this for's still a 10star recipe & one I make on rotation thru the fall & winter months..had it again & each time it seems to taste better than I remembered. I have shared this with lots of friends over the has it been that long? LOL

    I fix this soup for my family & more. If I could give this a 10 star I would. What I did different though was use cornstarch to thicken the soup at the tail end. Family rant & raved over this! Thank you MizzNezz

    I omitted the green pepper, just because I don't like it. And added carrots and celery, and bacon. I doubled the velveeta cheese because it wasn't cheesy enough for me. Loved it! My whole family did!
