- 1 cup milk
- 1⁄4 teaspoon black pepper
- 1⁄4 teaspoon salt
- 8 ounces processed cheese, product cut into cubes (Velveeta)
- 1 cup shredded cheddar cheese, divided use
- 1⁄2 lb elbow macaroni, cooked
- 8 ounces mexican chorizo sausage, cooked and crumbled

directions
- Preheat oven to 400 degrees F.
- Melt butter in a medium saucepan over medium high heat. Add the flour and cook stirring for 1 minute. Whisk in the milk slowly, then stir in the black pepper and salt, bring to a simmer and cook for 5 minutes until thick.
- Stir in the processed cheese and 1/2 cup cheddar until completely melted. Then stir in the pasta, and ground beef.
- Spread into an even layer in an 8”x10” baking dish. Sprinkle the remaining 1/2 cup cheddar over top and bake about 20 minutes, until edges are bubbling.
- Remove from oven and let sit for 5 minutes before serving. Top with pickle slices, chopped tomatoes and shredded lettuce if desired.
