  • Place potatoes in a large kettle; cover with water. Add 1/2 teaspoon salt; cook until tender. Drain; mash potatoes until smooth. In a saucepan, cook and stir butter, cheese, milk and remaining salt until smooth. Stir into potatoes; fold in eggs. Pour into a greased 3-qt. baking dish. Bake, uncovered, at 350 degrees for 40 minutes or until puffy and golden brown. Sprinkle with chives if desired.

  1. Nice variation on regular mashed potatoes. Two whole cups of cheese - yum!
     
  2. Easy to make and a different but tasty way to do mashed potatoe. I scaled this back to a 4 to 5 serve and still have 2 serves over which I will freeze as individual serves for the DH for when he does shift work. I didn't use the optional chives but did give it it a light dusting of paprika and would also consider puting some cheese of top. The DH says he would like to try it again and maybe add some chopped up ham. I also made it up in the morning and taking it out of the fridge about 30 minutes before it was due to go into the oven for its 40 minutes of cooking.
