Cheese Lemon Pizza

  • Preheat oven to 425°F.
  • Grate the peel from 1 lemon. Peel and thinly slice the other 3 and remove seeds. Set aside.
  • On a floured surface, pat the dough out, forming a thin 10-12 inch round crust. Brush with oil and sprinkle with the grated lemon peel.
  • In a large skillet, heat enough oil to coat the pan over medium heat. Add lemon slices, garlic, jalapenos and bell pepper. Saute for 2 minutes. Spread evenly over the pizza.
  • Spread cheese evenly over the pizza and then sprinkle with parsley.
  • Bake for about 20 minutes or until the crust is crisp and the cheese bubbles.
  • Slice and serve.
