ingredients
- 1 cup unbleached flour
- 1⁄2 lb sharp cheddar cheese, Grated
- 1⁄2 cup butter, Softened or 1/2 cup margarine
- 1 teaspoon cayenne
directions
- Mix all ingredients and shape in 1-inch balls.
- Arrange about 2 inches apart on baking sheet and bake in very hot oven (450 degrees F.) about 6 minutes.
- Serve hot or cool.

These were very tasty! Great for cocktail hour...or brunch, or bridal/baby shower...:lol: I thought they would be more like cheese straws, but they were 'chewier'; I added pecan halves to half of the batch, as we LOVE nuts. They were great either way! I rolled them in balls, but smashed them down with a folk. My yield was 46 wafers. Thanks, *Pixie*, for sharing a great recipe. Made for PAC Spring '09.

Made for *Fall07PAC*. This 4 digit recipe must have been here a LONG time, with no review !! I had tasted a savory cookie like this years ago, which was a flat disc, but about the same taste. These are a tad "puffy", and made 40 cookies. I don't think you would ever get 48 1 inch balls from this amount, so some of mine were smaller. I checked in 6 minutes, saw they had cheesy puddles, but had not melted much, so baked an additional 1 1/2 to 2 mins. They are simple to make (in a food processor), baked on a SILPAT sheet (but parchment would likely work). I used an 8 oz. bag of already finely grated sharp cheddar and butter (of course !). They are VERY tasty, and make a nice snack with your drink before dinner. I plan to keep some on hand for just that purpose ! Thanks, Pixie, for a truly tasty treat.
