Cheese and Pineapple Salad

- 1 (1 tablespoon) envelope unflavored gelatin
- 1⁄4 cup cold water
- 3⁄4 cup sugar
- 1⁄2 cup pineapple syrup
- 1 cup crushed pineapple, drained (use 14-oz can for fruit and juice)
- 1 cup freshly grated American cheese (or mild cheddar cheese)
- 1 cup heavy cream, whipped
directions
- Soften gelatin in cold water.
- Dissolve sugar in pineapple syrup in small saucepan over low heat. Add gelatin and stir until dissolved.
- Chill till partially set, add pineapple and cheese.
- Fold in whipped cream. Turn into serving bowl.
- Chill until firm.
