Cheddar Cheese Chicken with Bacon

ingredients
- 1⁄2 cup breadcrumbs
- 1⁄2 teaspoon thyme
- 1⁄4 teaspoon savory
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon black pepper
- 1 egg white, whipped
- 4 boneless skinless chicken breasts
- 1⁄2 cup bacon bits
- 1 cup grated cheddar cheese
directions
- Preheat oven at 350 and spray baking pan with non-stick cooking spray.
- Combine first 5 ingredients.
- Dip chicken first in egg white, then into crumbs.
- Place in baking dish.
- Bake for 30 minutes or until tender.
- About 5 minutes before chicken is done, top with bacon bits and cheese, then place back in oven until cheese melts.

I didn't have savory or thyme so I used the salt and pepper and added some garlic powder to the Italian bread crumbs. We thought it could have used some other spices mixed into it too. I followed the rest of the recipe as written. My hubby thought the finished product was too salty. The rest of us enjoyed it.

Husband and I quite enjoyed this dish! I flattened 3 large breasts and cut one in half for sandwiches later (maybe with a little dijon mustard on a soft roll). Also replaced the thyme & savory with a 1/2 tsp. of salt-free poultry seasoning and a whole egg instead of the white. I would consider finishing the dish under the broiler next time to brown a bit more because we like our cheesy goodness a little crispy! A definite keeper - thank you!
