- 1 lb ground beef
- 1 (1 1/8 ounce) packet taco seasoning
- 1 cup baking mix (like Pioneer or Bisquick)
- 1 (16 ounce) can refried beans
- 1 (4 ounce) can green chilies
- 1⁄4 cup water
- 1 cup salsa
- 1 cup shredded cheddar cheese
directions
- Preheat oven to 375°F.
- Prepare the ground beef and taco seasoning mix according to package directions.
- While meat is browning, mix baking mix, beans, green chilies and water.
- Spread bean mixture in the bottom of a 2-quart casserole dish.
- Top with meat, salsa, then cheese.
- Bake for 25 minutes.

I really liked this meal. My husband didn't, but that is because he really doesn't like refried beans. Yet, he had two helpings. So, I guess it wasn't too bad for him. LOL! I used Colby/Monteray Jack Cheese and put sour cream on top. Yummy. I think next time I am going to have some tortilla chips or something w/ it. Could use some kind of crunch.Reply

I wasn't crazy about this dish. I thought that the bisquick would make kind of a 'crust' but it just melded with the refried beans, creating a peanut-butter consistency that was hard to eat. I LOVE mexican food, so I am normally an easy sell. I added some lettuce, tomatoes and sour cream and ate it with some corn chips and it improved greatly. However, my husband loved it! He thought that the taste, consistency and fill-up values were all in place. So, I gave it 3 stars and will probably give it another try!Reply

I like this....but my DH LOVES it. i've made it several times and just realized i forgot to review it! Personally, i don't eat the dish as is...i like to mash it all up together, put sour cream on the top, and eat it with tortilla chips. YUM! i've also substituted a can of black beans for the refried beans, which is great....and we like monterey jack cheese instead of the cheddar.Reply
