  • Saute the onion and garlic in the olive oil until soft.
  • Add all the remaining ingredients, except the eggs, and simmer for a minute.
  • Make 4 indentations in the mixture and carefully break an egg into each one.
  • Cover and cook over a low heat until the eggs are set.
