Chai-Spiced Fruit Compote With Yogurt

- 2 chai tea teabags
- 3 tablespoons honey
- 1⁄2 cup dried apricot, each chopped into 8 pieces
- 1⁄2 cup pitted prunes, each chopped into 8 pieces
- 1⁄2 cup golden raisin
- 3 cups Greek yogurt, plain
- 1⁄2 cup almonds, sliced, toasted
directions
- Bring 1-3/4 cups water to a boil in a 2 quart saucepan. Turn off the heat, add the tea bags and steep for 5 minutes. Discard the tea bags.
- Add the honey, apricots, prunes, and raisins to the saucepan and bring to a boil over high heat. Reduce the heat to medium low and simmer, uncovered, stirring occasionally, until the liquid thickens to a light syrup, 18 to 20 minutes. (It will thicken further as it cools). Transfer to a bowl, cover, and chill for at least 4 hours and up to 3 days.
- Divide the yogurt among 4 small bowls. Serve the compote over the yogurt, topped with the toasted almonds.

My husband and I moved to Northeast Arizona (up in the mountains) in April (2007). We live near Show Low. The summer was absolutely beautiful! It never got to 100 degrees! Coming from Phoenix, we both enjoy being away from the heat and the city. Our first snow this year was absolutely gorgeous!
My recipe ratings pretty much follow the star system. I will usually make a recipe as is the first time. I say usually but I do still change things sometimes. I try to be fair if I have made changes. I will rate 5 stars if we LOVE it and it will be a regular dish around our house. 4 stars if we really liked it and 3 stars if it was just OK but we wouldn't make it again. I realize everyone's tastes are different so I do try to be gentle. Cooking can be a very personal thing to someone.
