  • In a saucepan, add the chopped green chilies, onion, salt, and tomatoes. Add chopped cassava and light coconut milk. Cook until the milk has almost evaporated (cook over medium heat). Add the thick coconut milk and bring to a boil. Cook for exactly 5 minutes. Allow to cool and garnish with a few coriander leaves.

  1. This was a very nice side dish. I didn't know what thick coconut milk was and used a coconut creram which was sweetened. This made the dish sweet, but I liked it! Thanks for posting as I am always looking for different ways to prepare yuca which my husband loves. made for ZWT 7.

This is a wonderful recipe.<br/>Cassava needed some time to be ready, I've done this step in the microwave, but I had to wait at least 10 minutes!<br/>It was the fist time for me a recipe with cassava (other names manioc and yucca). I found it in the shop and I found the recipe in the ZWT7 cookbook (Africa). If you have some, try this recipe.<br/>I'm sure that with sweep potatoes, yams, conventional potatoes this would be good to, but it's not the same.<br/>Raw cassava or unprocessed cassava can be a potential public health and safety risk due to the presence of cyanogenic glycosides in the raw or unprocessed cassava. I found the smell of raw cassave intensive!
