Caruso Casserole 

"This is delicious and simple. I had some extra sausage one day and needed a recipe. I found this and my three year old will even eat it! I don't add the zucchini and add extra tomatoes and tons of extra cheese. :o)"

  • Preheat oven to 350 degrees.
  • Cook sausage, onion and garlic in skillet until sausage is brown and crumbly. Drain and set aside.
  • Melt butter, stir in flour and seasonings until smooth.
  • Remove from heat and stir in milk. Bring to a boil over medium heat, stirring constantly for 1 minute.
  • Reduce heat to low. Stir in half of the cheese.
  • Stir in cooked sausage mixture, noodles, zucchini and tomatoes.
  • Turn into buttered 1 quart casserole. Bake 25 - 30 minutes or until hot and bubbly.
  • Remove from oven and sprinkle with remaining cheese.
  • Return to oven to melt cheese.

  1. We really enjoyed this Casserole. I used close to a pound of sausage and omitted the zucchini because I couldn't find any that looked good. The cheese sauce really set this apart from other casseroles. All in all very good & it reheated great. Served with a big salad & garlic bread. Made for PAC Spring 2010. Thanks for posting.
