Carrot Raisin Salad

ingredients
- 1 lb carrot
- 1 green onion
- 1 teaspoon fresh lemon juice (about 1 wedge)
- 2 tablespoons golden raisins
- 1 tablespoon olive oil
- 1⁄2 teaspoon ground cumin
- 1⁄4 teaspoon salt
directions
- Peel carrots and grate, using the large grater holes, over a medium bowl.
- Slice green onions and add to bowl.
- Add lemon juice, raisins, olive oil, cumin, and salt.
- Mix well.

Made as written for the Turkish Corbasi, Salatalar & Sandvic Challenge of CQ #4. This was an easy-fix that I made early in the day & chilled so the flavors could develop well. My DH esp liked this for its low-salt content & the absence of mayonnaise often abundantly present in carrot salads. I appreciate both varieties, so this was an all-around success for us.
