Carrot Cake Overnight Oats

ingredients
- 2⁄3 cup old fashioned oats
- 2⁄3 cup milk, of choice (cow’s, almond, soy, rice…)
- 1⁄4 cup plain Greek yogurt
- 1 grated carrot
- 1⁄2 teaspoon ground cinnamon
- 1⁄2 teaspoon ground ginger
- 1⁄4 cup walnuts, roughly chopped
- honey and Greek yogurt, to serve
directions
- In a medium bowl, mix the oats, milk and yoghurt together. Stir in the carrot, cinnamon and ginger.
- Divide between two bowls or mason jars and store in the fridge overnight.
- In the morning, top with the walnuts, honey and extra yoghurt if desired. Serve.
