  • Combine flour, sugar, baking powder, baking soda. salt, and cinnamon in a large bowl. Mix until blended.
  • Add oil to flour mixture while mixing. Then add the carrots and eggs, one at a time, mixing well after each addition.
  • Stir in nuts and vanilla; mix well.
  • Pour into a well greased and floured 9X13 pan. Bake in a preheated 350°F oven 50 to 60 minutes or until done.
  • Allow to cool thoroughly. Frost with frosting.

  1. I don't like carrot cake, but it's my husband's favorite cake in the world. So I thought I'd try this reciepe. My husband liked it, didn't rave about it, but that could be because our oven is off and I over cooked it. I will try again though, because it was super easy to make.
