  • Trim off excess fat, season and marinate meat overnight with salt, garlic, vinegar, bay leaf, and pepper.
  • Peel and cut up potatoes, yams, mandioca, and green bananas.
  • In a pot, cook meat with marinade and 3 onions with 1/2 cup cooking oil on low heat until medium done.
  • Add all vegetables to meat and cover with water. Cook on low until vegetables cook.
  • Season with salt, garlic, bay leaf, paprika, and pepper.

They were once a colony of Portugal so I have both in my gene bank. I am a professional jazz vocalist but love all types of music. I love to entertain and am famous for my West Indian dishes. My husband had a kidney transplant a few years ago and as a result of the many medications he has diabetes so I have learned to adjust my recipes to ones that keep him healthy and happy. My friends call me the Jazzy singing kitchen diva.</p>
