Carb Killer Zucchini Crust Pizza

- 2 large zucchini (grated)
- salt (as needed)
- 4 eggs (beaten)
- 1⁄2 cup whole-grain wheat flour or 1/2 cup wheat germ
- 1 cup mozzarella cheese (grated)
- 1 cup parmesan cheese (grated)
- 1⁄2 teaspoon dried basil
- 1⁄2 teaspoon dried oregano
- 1 tablespoon olive oil
- 1 tablespoon olive oil
- 1⁄2 lb ground beef
- 1⁄2 lb ground turkey
- 1⁄4 cup parsley (minced)
- 2 teaspoons fennel seeds
- 1 teaspoon crushed red pepper flakes
- salt & fresh ground pepper (to taste)
- 1⁄8 teaspoon dried thyme
- 2 garlic cloves (minced)
- 1⁄4 cup dry red wine
- 1⁄4 lb mozzarella cheese (shredded)
directions
- Place zucchini in a colander. Salt. Let stand 10 minutes.
- Rinse. Drain well.
- Heat oven 400.
- Combine zucchini with the eggs, flour, cheeses, herbs and 1 tablespoons olive oil.
- Press out into a rouns circle on a sprayed pizza pan.
- Bake 20 minutes.
- Brush with 1 tablespoons olive oil.
- Bake 15 more minutes. Remove. Set aside.
- In a skillet, brown the beef and turkey.
- Add the parsley, fennel, pepper flakes, salt, pepper, thyme and garlic. Saute 2 minutes.
- Add wine. Deglaze until evaporated.
- Let cool.
- Scatter on crust. Top with cheese.
- Bake 20 minutes. Let stand 5 minutes.
