DIRECTIONS

  • Spray wok or skillet with cooking spray. Heat over medium until hot.
  • Add chicken, scallions, garlic, and ginger and stir-fry until chicken is nicely browned; 4-5 minutes.
  • Combine remaining ingredients (except rice) and stir into chicken, and cook 3-4 minutes.
  • Serve over rice.
