These are delicous, thick, chewy little buggers that have very simple ingredients you can usually find in your kitchen! According to your taste you can also use vanilla, chocolate, or caramel chips for several different flavors!

- 1⁄4 cup margarine
- 1⁄3 cup butterscotch chips
- 1⁄2 cup packed brown sugar
- 1⁄2 teaspoon vanilla
- 1 egg
- 1 3⁄8 cups flour
- 1 teaspoon baking powder
- 1⁄4 teaspoon milk
- 1 teaspoon cinnamon
- 1⁄4 teaspoon clove
- 1⁄4 teaspoon ginger
directions
- In a medium-size bowl place butterscotch chips and margarine together and microwave for about a minute or until starting to melt together. Stir together until smooth and melted.
- Pour mixture into a larger mixing bowl and add the egg, milk and vanilla, mixing to thoroughly combine.
- Sift dry ingredients together and add to wet mixture.
- Drop by desired amount to get however many cookies you want and bake at 375 degrees F for 10-12 minutes or until you can't bear to wait any longer! :).

These were okay. I was expecting a much stronger butterscotch flavor because of the name, but they tasted more like a spice cookie. Maybe if I decreased the spices it would be more butterscotchy? Also the batter was really thick and they didn't turn out to be very chewy. More cake-like I think.Reply
