Cajun Grilled Shrimp

ingredients
- 2 lbs shrimp, peeled deveined, and be sure they are thawed, if using frozen. (I buy mine at Sam's 2 lb bag)

Marinade
- 1⁄2 cup olive oil
- 2 tablespoons lemon juice
- 2 tablespoons parsley
- 1 tablespoon honey
- 1 tablespoon soy sauce
- 1 tablespoon paprika
- 2 1⁄2 teaspoons salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon cayenne pepper
- 3⁄4 teaspoon white pepper
- 3⁄4 teaspoon black pepper
- 1⁄2 teaspoon thyme
- 1⁄2 teaspoon oregano
directions
- Mix together. Marinade for up to 24 hours. Skewer and grill, 3 minutes per side, or until tender. Serve warm or refrigerate to serve later.

Made this last night. Great flavor and awesomely spicy! I had less shrimp than I thought, so I had extra marinade. I hate throwing stuff out, so I cooked the shrimp in the marinade and mixed it with cooked white rice. 1 cup rice still left it a bit soupy 2 cups gave it a great consistency, but still pretty spicy I just added another cup of rice to the leftovers and I think that might work out just perfectly :)

Oh Yum, Thank you cookin-jo for the wonderful picture you took of this recipe. The family just loved it, the teen asked for it again. I did the marinade 1 and a half times what it called for. I liked how cookin-jo used a basket and used something similar. Thank you again debita, we will enjoy this wonderful recipe again.

This is a killer recipe!!! If you enjoy highly flavoured, spiced foods you'll love this one. I made this mostly as posted except for reduing the amount of pepper, and it was perfect. I also didn't skewer the shrimp, just tossed them in a grill basket. Made for 4 people, one of whom isn't a shrimp fan, and there were only a few left. This will be made often during summer months. Thank you!
