Cajun Fettuccini

ingredients
- 1 tablespoon olive oil
- 3⁄4 cup smoked sausage, sliced
- 12 medium shrimp (30-35 per pound)
- 2 teaspoons fresh garlic, minced
- 1⁄2 teaspoon cayenne pepper
- 2 tablespoons dry sherry
- 1⁄3 cup half-and-half
- 1⁄3 cup chicken stock
- 1⁄4 cup scallion, chopped
- 2⁄3 cup parmesan cheese, freshly grated
- 3 cups fettuccine pasta, cooked
directions
- Drizzle oil in the pan.
- Saute the smoked sausage, shrimp, and minced garlic. Add the cayenne pepper.
- Deglaze the pan with the sherry.
- Then add and heat up the half-and-half, and chicken stock.
- Stir in the scallions, and then add the parmesan cheese.
- Serve over the cooked fettuccini.
- Enjoy!

I have given this 5 stars but it was a toss up with my family between the 4 and the 5. This is a great after work quick meal that is packed with loads of flavour. I loved the combination of flavours that came through in this dish. The smoked sausage and shrimp were reallly yummy. I made as is but used light cream instead of half and half and I also added a little more than stated.. I also sprinkled the dish with extra parmesan at the end.. A great recipe thanks for sharing..
