- 1 lb ground beef
- 2 small onions, chopped
- 1 green pepper, chopped
- 1 clove garlic, minced
- 6 cups chopped cabbage
- 1 1⁄4 cups uncooked long grain rice
- 1 (14 1/2 ounce) can stewed tomatoes
- 1 (8 ounce) can tomato sauce
- 1 cup water
- 1 teaspoon sugar
- 2 teaspoons cajun seasoning
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- oil (for frying)
- cayenne pepper (optional)
directions
- In large dutch oven add oil for frying and brown the beef and drain it, then return it to the original pan.
- Add onions gr pepper and garlic, cook until onions are transparent.
- Add the cabbage, rice, tomatoes, tomato sauce, water and seasonings.
- Cover and bake at 375 for 50-60 minutes or until cabbage is tender.

I increased the beef to 1 1/2 Lb. Used a medium head of Cabbage.Used 1 Cup of Rice and added 1 link of fresh Andouille Sausage to the Beef.Did not use any Oil to fry. The G. Beef had enough fat for that. Since its supposed to be Cajun I added 1/4 Tsp. Cayenne to the Cajun seasoning I have.Perfect winter meal for a cold day. My little lady loved it. A keeper recipe! Loved this casserole, made with a head of garden fresh cabbage. I pretty much doubled the amount of water called for, omitted the sugar, salt, pepper, and oil for frying, as the beef releases enough of its own juices for browning...and I added chopped parsley. Also threw in extra chili, onion,& garlic powders, and thyme, basil and cayenne, because I ran out of cajun seasoning. It delivered! Flavour with a good kick. Good recipe, good directions. Thanks!
