ingredients
- 8 ounces flour
- 1⁄2 teaspoon baking powder
- 4 ounces butter
- 4 ounces brown sugar
- 8 ounces dried fruit, mixed
- 1 tablespoon orange peel, candied
- 1⁄4 pint buttermilk
directions
- Preheat oven to 350°F.
- Sift the flour and baking powder and rub in the butter.
- Add the dried fruit.
- Mix to a fairly stiff consistency with the buttermilk.
- Line a cake tin and bake at 350 F for about 1 hour.

Can I BEG you to email me the photocopied version of YOUR BOOK?! I’m using a grain mill, and thus, what we are now calling “whole flour” and with that cake in the oven, I have some VERY high hopes your Welsh cookbook is my Holy Grail! Conversely, you could just share with everyone... and I just realized I forgot the orange zest/candied orange peel! Maybe I can google a quick orange flower water glaze... Thank You!
