Cabbage Veggie Soup

I wanted a simple figure friendly soup so I came up with this. It has plently of flavor with not many calories. Is sure doesn't hurt that it warms you from head to toe. Taste even better the next day!!

ingredients
- 4 cups cabbage
- 4 cups chicken broth
- 1 (14 ounce) can diced tomatoes
- 1 large onion
- 1 green pepper
- 4 stalks celery & leaves
- 1 -2 tablespoon Worcestershire sauce
- 1 -2 teaspoon oregano
- 1 teaspoon thyme
- 2 garlic cloves
- salt & pepper
- parmesan cheese
directions
- Cut cabbage into 1" pieces, dice onion, green pepper, celery & garlic.
- Mix all ingredience except cheese in a soup pot and bring to a boil. Turn heat down and simmer on low for at least 2 hours and up to all day.
- Serve with cheese on top.

Really tasty. I was also out of diced tomatoes so I diced a batch from my garden along with one pimento pepper. I was also out of celery so I used some fresh carrots and lima beans instead. Since I'm now on a low fat, low sugar (diabetic) diet this is going to become a staple. Great flavor and healthy to boot! Thanks for posting!!!!!Reply
