Cabbage, Bacon and Pomegranate Salad

- 1 cup Chinese cabbage
- 1 cup red cabbage
- 1 cup mixed salad green
- 1 teaspoon fresh garlic
- 1⁄2 sweet onion
- 2 tablespoons golden raisins
- 4 -6 ounces thick slab bacon
- 2 tablespoons maple syrup
- 1⁄3 cup vegetable oil
- 2 tablespoons pomegranate red wine vinegar
- 2 tablespoons pomegranate concentrate
- 1 tablespoon sugar
- 1 teaspoon lemon pepper
- salt
directions
- Start cooking bacon to desired doneness. Drizzle with maple syrup and allow to heat through.
- Finely slice up cabbages and onion. Toss with field greens and raisins.
- Next, make your dressing. Mix oil, pomegranate conc, sugar, vinegar and lemon pepper and salt, and garlic. Taste to make personal adjustments before adding to salad.
- Remove bacon, drain on paper towel. When cool enough to handle, break into desired sized pieces.
- Mix the salad in the bowl with the dressing, and top with the maple syrup bacon.
- Regular flavored vinegar can be subsituted.
