- 1 cup butterscotch chips
- 1⁄2 cup peanut butter
- 1⁄4 cup hard butter
- 8 ounces coloured mini marshmallows
directions
- Heat the butterscotch chips, peanut butter, and butter.
- Stir until smooth. Watch it; peanut butter burns quickly!
- Cool a wee bit.
- Stir in marshmallows.
- Pat into a greased 8x8-inch pan and chill.
- Cut into squares.

Love it, HOWEVER, double the recipe to make a decent sized serving. The amount the recipe gives is more like for 1-2 people There wasn't enough marshmallows even when it's doubled... So instead I recommend about 24 oz in total if you double it otherwise I find that there's too much peanut butter/butterscotch mix that overpowers it. However if that's your thing... That's your thing. It tastes great though!

My favorite recipe book definately is "The American Woman's Cookbook" published in 1938 for the first time. It has the best recipes I have ever found - until I got a computer.
