- 1 egg white
- 1 cup sugar
- 1⁄4 teaspoon cream of tartar
- 1⁄2 cup boiling water
- 1 teaspoon lemon rind
- 1⁄2 teaspoon lemon extract
directions
- combine very well chilled egg white
- sugar cream of tarter in small mixing bowl.
- add boiling water and beat immediately at high speed until thick and fluffy (see this is where i feel might have scrambled eggs without tempering ).
- add lemon rind finely grated and lemin extract.
- can tint if you want.
