DIRECTIONS

  • 1. Preheat oven to 350*F. Brush a 9-inch round cake pan with oil. Line bottom with parchment paper.
  • 2. Using electric beaters, beat butter & sugar in a small mixing bowl until light & creamy. Add eggs one at a time, beating well after each addition. Add vanilla; beat to combine.
  • 3. Transfer mixture to a large bowl. Using a metal spoon, fold in the sifted dry ingredients alternately with the milk. Stir the mixture until just combined & almost smooth.
  • 4. Spoon mixture into prepared pan; smooth surface.
  • 5. Bake cake for 40 minutes or until skewer comes out clean. Leave in pan for ten minutes, then turn onto wire rack to cool.
  • Note: The cake may need to be moistened with simple syrup. Frost with your favorite icing.
