- 1⁄2 lb unsalted butter (2 sticks)
- 1 3⁄4 cups white sugar
- 3 cups flour
- 1 tablespoon baking powder
- 1⁄2 teaspoon table salt
- 6 eggs, separated
- 1 cup milk
- 1 teaspoon vanilla
directions
- Preheat oven to 375°F Butter two 9" cake pans.
- Cream butter and sugar together.
- Sift together flour, baking powder and salt. In another bowl, beat together egg yolks, milk and vanilla. Alternately add dry ingredients and wet ingredients to butter and sugar, starting and ending with dry ingredients.
- Beat egg whites to soft peaks and fold into batter. Divide batter between cake pans and bake 25-35 minutes, or until a toothpick inserted in center of cake comes out clean.
- Cool in pans 10 minutes, then turn out onto cooling rack until completely cooled. Fill and frost with your favorite frosting.
