ingredients

  • 6 ounces cooked chicken (I use buffalo deli chicken)
  • 2 teaspoons diced green onions
  • 14 cup blue cheese
  • 12 cup Baby Spinach
  • 2 teaspoons mayonnaise
  • 2 -3 teaspoons buffalo wing sauce (bottle variety)
  • 4 slices bread, your choice (I use either flat bread or Italian)

directions

  • Combine mayo and wing sauce.
  • Spread top and bottom of inside of sandwich with this mayo mixture.
  • Assemble sandwich layering chicken, onion, spinach, and cheese.
  • Grill on panini press, George Forman, or skillet until heated through and cheese has melted.
  • Serve with plenty of napkins.

  1. Made this last night, though with a few minor changes. I didn't mix the mayo and hot sauce together, but rather, I spread a thin layer of plain mayo on the inside of each Hogy roll, then filled with the green onions and spinach, blue cheese, and then the chunks of chicken, which I made from diced chicken breast and sauteed in my skillet, then drizzled a rather generous amount of sauce over it all, and cooked them on my panini press. The blue cheese is a bit strong, but then, so is the wing sauce, so for me, it was all a great balance. Thanks for sharing.
     
  2. Great idea to make this as a panini! I actually made it as a one-serving wrap for lunch and omitted the green onions (didn't have any) and the mayo (not a fan), so that's why I am rating it 4 stars. I poured the wing sauce on my sliced chicken and heated it up in the microwave before I put the rest of the stuff in the tortilla. I also used blue cheese dressing. Thanks for the idea!
     
  3. Nice quick recipe. I used some leftover steamed chicken, and added some pepperjack cheese in addition to the bleu cheese. Made for ZWT4.
     
  4. Delish! I went to an Italian restaurant the other night and talked to them about a good bread for a panini. They convinced me to buy a really dense Italian country bread that I used for this sandwich. It worked very well. I couldn't find a buffalo wing sauce, so used a barbecue sauce instead. While I was eating this, it occurred to me that it probably should have been a white sauce, lol. This was delicious and next time I would cook mine a little longer to get the cheese to melt more. Thanks Vicki for a great sandwich. Made for ZWT4 Italian Panini Challenge.
     
  5. this was very good. i tasted the mayo sauce before spreading it on the sandwiches & i have to say that i will using the buffalo/mayo in my for sandwiches from now on! the bleu cheese was kind of overpowering i really didnt taste much of the sauce once the panini was put together but overall a great treat!. zwt4!
