Brunch Rice Burritos

ingredients
- 1 teaspoon olive oil
- 1 cup onion, diced
- 1⁄2 green pepper
- 6 large eggs
- 1⁄2 cup milk
- salt and pepper, to taste
- 1 (4 ounce) can green chilies
- 4 ounces chopped olives
- 1 teaspoon chili powder
- 1⁄2 teaspoon cumin
- 3 cups rice, cooked
- 1 cup Mexican blend cheese
- 8 -12 tortillas
directions
- Saute onions in olive oil for a minute, then add peppers.
- Whisk eggs, milk, salt, and pepper until foamy.
- Add chililes and olives along with chili powder and cumin.
- Add egg mixture to skillet and cook until beginning to set, then add rice and cheese.
- Stir to break up rice.
- Continue to cook and stir until no longer runny.
- When fully cooked, serve in tortillas.
