Brown Fried Rice - Five Treasure

- 2 tablespoons canola oil
- 1 cup broccoli stem (peeled, finely diced approx 1 1/4 lb. broccoli)
- 3⁄4 cup diced carrot
- 3⁄4 cup diced red bell pepper
- 3⁄4 cup edamame (shelled and frozen)
- 3⁄4 cup corn kernel (fresh or frozen)
- 4 scallions, thinly sliced (both white and green parts)
- 2 tablespoons fresh ginger, grated
- 2 large garlic cloves, minced
- 4 cups cooked brown rice, chilled
- 3⁄4 cup diced Canadian bacon (4 oz)
- 2 large eggs, lightly beaten
- 1⁄4 cup low sodium soy sauce
directions
- Heat all but 1 tsp of the oil in a large non-stick skillet or stir-fry pan over medium heat.
- Add the broccoli stems, carrots and bell pepper and cook, stirring frequently, until the vegetables begin to soften, 3-5 minutes.
- Add the edamame and corn and cook until the edamame is thawed, about 1 minute.
- Add the scallion, ginger, and garlic and cook, stirring, until the raw garlic aroma subsides, about 1 minute.
- Add the cold rice and bacon and cook, stirring until heated through 3- 5 minutes.
- Make a 3 inch well in the center of the rice mixture.
- Add the remaining 1 tsp of oil, then the eggs, and cook, stirring until the eggs are almost fully scrambled.
- Stir the eggs into the rice mixture.
- Stir in the soy sauce and serve.

Delicious recipe! This is very much like an Ellie Krieger recipe I have made and enjoyed, but I can't find that one right off hand. This is definitely a great recipe to try. Very flexible, and if you have the veggies chopped and the cold rice ready, it goes together in a snap. I feel so healthy when I eat meals like this - love it! I do find that adding some salt to the finished product really brings out the flavors for me.

Great recipe! I have made so many fried rice recipes, but none with brown rice. This was a special treat, as I love brown rice! The aroma was fabulous while cooking, hubby kept saying "Is it done yet"? It's too bad that while it takes a few minutes to make some of these great reccipes, it gets "downed" in no time! Very nice side dish, and wonderfully flavorful, with all the vege's in it so takes care of the Starch and Vege's whoopi only one side dish that night. Thank You for a wonderful recipe.

I live in Ontario and work full time as a consultant in IT for a communication company in another province. I create test cases and scripts and initiate the testing for the software changes that the programmers make to the company’s various programs. I have the pleasure of working from my home and dialling into their network. I also sell Avon for fun.
I met my husband (Paul) on a blind date. We dated 3 years and have been married for 25 years. We have two children a son(age 20) and a DD(age 17). We have been blessed with the best two kids anyone could ask for.
DH is a commerical airline pilot and currently is a "Check Pilot" on the A320. He is away quite a bit, so when he comes home I try to make sure he has a decent meal. He eats out when on the road so he really enjoys a good home cooked meal when he arrives home, while the rest of us want to go and eat out.
I love to spend time in my garden, travel and try new recipes. DH and I love to travel or just spend time at a cottage in the summer. I have not been on a cruise but hope to within the next 2 years (maybe for our 25th wedding anniversary.)
We pretty much eat anything. DH especially loves seafood (more than I do.) while I prefer to eat chicken. We are so predicable when ordering our meal at a restaurant. Next, I think it would have to be Italian and then something spicy like Thai or Indian. My family loves Indian food but I have never had the courage to make it. Maybe I will someday.
I like to read true stories and criminal books. David Baldacci is one of my favourite authors.
My favorite restaurant is "Bin 23", "Einsteins Cafe," "Abberfolye Mill"
My brother sent me the link to Recipezaar and now I am hooked trying new recipes every day. I don't think I will buy another cook book.
