Broiled Sole Parmesan

- 1⁄2 cup freshly grated parmesan cheese
- 3 tablespoons butter, softened
- 1⁄8 teaspoon cayenne pepper
- 2 tablespoons thinly sliced green onions
- 3 tablespoons mayonnaise
- 1 teaspoon grated lemon, rind of
- 1 1⁄2 lbs sole fillets
- 2 tablespoons lemon juice
directions
- Heat broiler.
- In medium bowl, stir together all ingredients except fish and lemon juice.
- Place sole fillets on broiler pan; sprinkle with lemon juice.
- Broil 3-4 inches from heat until fish flakes with a fork (about 3-5 minutes).
- Spread Parmesan mixture over fillets and broil until bubbly and golden brown (3-5 minutes).

I thought I had reviewed this ages ago, but here we go. This is a fabulously easy recipe! After the first time I made it I cut out the butter entirely. I use fresh parm, sometimes I use the onion sometimes not and I've been known to add garlic powder and a dash of hot sauce in place of the cayenne. The fresh lemon juice and zest are the perfect foil for the richness of the mayo/cheese. I've given up trying to turn the fish, the sole I buy at Costco is so thin I broil for about 2 minutes add the topping and broil about 2 more. I wanted to add some texture to the dish so I sprinkle crushed croutons over the topping before broiling. I recently made this with rock fish and it was great, there's more substance to the fish so the topping doesn't overwhelm it (this one I turned).

<br>June 2003 Update: I now work part-time as a vet tech and part-time as an ER ward clerk at a local hospital. After being a technician for 20 years, the emotional stress was getting too hard to handle. Putting an older pet to sleep after I'd watched them grow up over the years was something I could no longer do. I decided to look for a new job while I was still 40-something rather than wait 4 years when I was 50-something! Working with animals is in my blood however, so I could not give it up entirely.
